Hogcasing
  • The hogcasing is used for many types of sausages, depending on the diameter of the casing:

30/32 – grilled sausage

32/34 – classical measure for Debrecen type sausage

34/36 – baking sausage

36/38 vagy 38/40 – smoked sausage

38/40, 40/42 vagy 42/+ – bloody or livery sausage

Hogstomach
  • For head or other meat cheese

Hog chitterlings
  • Traditional use for livery or bloody sausage

Hog afterends
  • For livery or bloody sausage, and liverwurst

Hogfatends
  • Mainly for „thick sausage”, but good for liverwurst also.

Hogcaps
  • For kulen or other type of sausages.

Beefmiddles
  • For salami, “thick sausage”, liverwurst.

Beefrounds
  • Good for crinoline, saveloy, livery/bloody sausage.

Sheepcasing
  • For grilled sausage, and premium wursts, frankfurters
